Ingredients:
For the Tofu:
· 1 cup extra firm tofu
· 2 tbsp extra virgin olive oil
· Salt to taste
· 1 tsp black pepper
For the Gravy:
· 1 red onion (sliced)
· 1 tbsp ginger-garlic paste
· 1 tomato (chopped)
· 2 cups spinach (chopped)
· ½ tsp cumin powder
· 1 tsp coriander powder
· 1 tsp red chili powder
· ½ cup water
· ½ cup coconut milk
· Salt to taste
Method:
1. Blanch spinach in boiling water for 2-3 minutes. Drain and let it cool.
2. Blend spinach and tomato until smooth.
3. Heat olive oil in a pan, sauté tofu with salt and pepper for 5 minutes until golden brown. Set aside.
4. In the same pan, sauté sliced onions for 2 minutes.
5. Add ginger-garlic paste, blended spinach mix, and dry spices. Cook for 5 minutes.
6. Add salt, water, and coconut milk. Let it boil.
7. Add fried tofu, cover with a lid, and cook on low for 10 minutes.
8. Garnish with coconut milk. Enjoy!
