Ingredients:

·200g firm tofu – excellent source of plant-based protein and calcium

·4 cups fresh spinach – rich in iron, folate, and antioxidants

·1 medium onion, chopped – supports detox and digestion

·2 tomatoes, chopped – great source of lycopene and vitamin C

·2 cloves garlic, minced – powerful anti-inflammatory & immunity booster

·1 tsp grated ginger – supports digestion and hormonal health

·1 tsp cumin seeds – aids digestion and balances hormones

·1 tsp coriander powder – rich in antioxidants & supports metabolism

·½ tsp turmeric – potent anti-inflammatory & supports liver detox

·½ tsp garam masala – adds depth + supports digestion

·2 tbsp olive oil or coconut oil – healthy fats for hormone production

·Salt to taste

Method:

1.     Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.

2.     Add onion, garlic, and ginger. Sauté until onion turns golden brown.

3.     Add chopped tomatoes and cook until soft and mushy.

4.     Add turmeric, coriander powder, and salt. Mix well and cook for 1-2 minutes.

5.     Add chopped spinach and cook until wilted. Stir occasionally.

6.     Add cubed tofu and gently mix. Let it simmer for 5 minutes to absorb flavors.

7.     Sprinkle garam masala on top. Turn off the heat and let it rest for 2 minutes before serving.
